    Antoine, the company manager, trained at the Lycée Hôtellier, where he learned the basics of cooking, pastry and service; he then moved to Paris to learn pastry on the job in prestigious places (such as Le Bristol; Le Plazza Athénée; La Grande Epicerie de Paris...). He worked as a pastry chef in many companies; and through some encounters he became passionate about Bread.
