  • Despite the extreme discretion of this very refined and hidden-away eatery in Rue Espariat, Jean-Luc Le Formal's reputation went beyond the 15th-century arches of this artist's studio many years back.

  • A colourist of flavours and alchemist of sauces, Jean-Luc juggles cleverly with his produce and accommodates it with the precision of a piano tuner. His partitions are complex: foie gras with fig caramel and pear chips, sweetbread nuggets, Noirmoutier bonnotte potatoes with a lobster salpicon sauce, carrot gravy with liquorice or tender pigeon pastilla with a chocolate sauce. An outstanding technician, blessed with immense sensitivity.
