  • Enough of office life! One day, Pierre Balmitgère wanted the fresh air and the infinite blue of the sea.

  • Seyne-sur-Mer, in the Bay of Lazaret, to run his own fish farm, one of those wooden houses built on stilts that have been delighting the eyes and palate of the Varois people for decades. Today, the couple watches over two farms: the first is still dedicated to fish (wolves, sea bream and lean fish), the second shelters oysters and, above all, the great local specialty: the Tamaris mussel.
