Chestnut cream is produced exclusively by hand, using "elbow grease" and no fossil fuels except for cooking and transport during deliveries. The chestnut grove, planted and exploited for over 200 years, has been completely abandoned and untended for over 70 years. We have deliberately chosen not to prune or intervene on the trees, with the exception of irrigation in dry summers when their location allows. Harvesting is done by hand.
