For this new adventure at "La Palme d'Or", Jean Imbert wanted to do things simply and spontaneously. His cuisine is gastronomic, of course, but above all it's uninhibited and instinctive, with a focus on fish, either sublimely raw or grilled over a wood fire, and the many riches of the Mediterranean.
