A vast terrace in the shade of generous vegetation. Clean and elegant tables. In the background, a country house clad in stone : Le Moulin, an iconic establishment in Mougins once made famous by the multi-starred chef Roger Vergé.
Gourmet, Mediterranean and accessible cuisine
“We want to rediscover the authentic and warm soul of the Moulin, while opening it to as many people as possible,” explains Gilles Borelli, at the helm of the catering and management side with Stéphane Dadoune and Séverine Bernardini.
On the menu, no haute-couture gastronomy as in the past, but cuisine that is as qualitative as it is affordable and gourmet, imbued with Italy and Mediterranean flavors.
“It’s what I’ve always done. I fell into it when I was little with my restaurateur parents and my Italian grandmother, who was the first to set up a small family inn where she provided generous cuisine. At our house, there’s no question of leaving the table hungry, it’s a golden rule,” explains Gilles, who is not his first challenge. After having successfully created “Il Teatro” in Cannes then the “Altro” in Antibes, he flew to Mauritius for a few years where he launched three new establishments (a first alone, then two others with his partner Olivier.)
Back in France, he was able to find loyal teammates for this new Mougins adventure. The chef is the same as at “Il Teatro”, the local and transalpine suppliers are always there, as for the team, it is managed like a family.
A lovely philosophy that we perceive from the moment we welcome you, and which goes wonderfully with the new decoration, which is just as warm.
