New! Le Vallon de Valrugues is delighted to welcome Chef Alexandre Fabris and his team, who will be offering Provençal and Mediterranean cuisine with refined and generous flavours.
The new gourmet restaurant will open its doors in March 2026.
But who is Chef Alexandre Fabris? Originally from Bourgogne-Franche-Comté, he discovered his love of gastronomy at an early age in the kitchens of his grandmother's family inn. This early inspiration, steeped in childhood memories, still informs his signature creations today.
Trained by great masters such as Marc Meneau and Jacques Lameloise, he perfected his art in prestigious establishments in Corsica and Provence-Alpes-Côte d'Azur. In 2019, his talent was rewarded with his first Michelin star in Calvi, which he then retained for five years in Saint-Tropez at a renowned establishment.
Passionate about local and seasonal produce, Chef Fabris maintains close relationships with producers and artisans in the region, whom he considers to be the true guardians of the culinary identity of the South. A committed chef, he defines himself as a ‘passeur’ (conveyor): between the product and the plate, but also between generations. His cuisine, both simple and deeply authentic, celebrates the truth of flavour and is part of a living tradition where terroir, emotion and modernity come together.
