THE RESTAURANT
The restaurant was established in 2015.
Inspired by a surprising encounter with Rogelio, a young vegan Mexican owner of a self-sufficient ranch in the Sierra Mountains of Baja California, our cuisine is fair-trade and Mexican-inspired, mostly plant-based, with organic, local and seasonal produce.
Our menu follows the seasons and changes according to what the producers we work with have to offer.

Every day, Santa Rosalia is committed to cooking organically grown*, local and seasonal produce, favoring plant-based products, limiting waste, offering a limited menu that is accessible to as many people as possible, sorting recyclable waste, composting organic waste and using biodegradable packaging.
*98% organic products, with the exception of a few spices and herbs.
