Sushi Shop was founded in 1998 by two entreprising young French men, Grégory Marciano and Hervé Louis. The brand was franchised as of 2006 with the arrival of a third partner, Adrien de Schompré. In 2019, Sushishop has 88 outlets in France, 45 outside of France and is present in 12 countries (France, United Kingdom, Belgium, Luxembourg, Germany, Switzerland, Italiy, Spain, Portugal, Netherlands, United Arab Emirates...).

Since 2018 Sushi Shop has joined the group AmRest, a major player in the restaurant business in Europe. Each Sushi Shop proposes a wide range of sushi of both Japanese and California inspiration: sushi, maki, california, spring, sashimi, tartares, etc. Constantly looking for creativity and innovation, the brand has gained notoreity through its work with celebrity chefs.
Sushi Shop has simultaneously shown its own artistic creativity through partenerships with artists and young designers, brands and rising star illustrators.
