Kom&Sal biscuits

A gourmet collection to celebrate the terroir of Provence

When the Provence brand and the starred and committed chef Nadia Sammut, from the Luberon, join forces, the result is delicious made-in-Provence biscuits, good for morale and well-being.

Made in Provence biscuits and a kit to make your own panisses

Deliciously healthy, they are a homage to the Provencal terroir and its history. They’re also highly creative and suitable for everyone: gluten-, lactose- and egg-free. The Provence brand has associated with Kom&Sal, a committed flour mill, bakery, pastry shop and delicatessen to offer 3 exclusive recipes, all both tasty and unexpected:

  • Biscuits with chickpeas and rose water, gluten-free and organic (120-gramme box)
  • Gressinis with fennel, gluten-free and organic (120-gramme box)
  • A kit to make the famous Panisse of Provence, a speciality based on chickpea flour, for your aperitifs with aïoli sauce. For important moments to share your with family or friends.

Kom & Sal, the brand by the starred chef Nadia Sammut

But where does the name Kom&Sal come from? Ever since the Middle Ages in Provence, Commensales has been the name given to farming guilds. The word also means sharing a meal, and it is the perfect example of the philosophy of the brand created by Nadia Sammut, who proudly and expertly valorises the work of local producers.

So, using flours produced in its own mill, Kom&Sal dreams up and develops recipes for bread, pastries and delicatessen products. Unrefined sugars are used solely for seasoning. All Kom&Sal’s creations are vegetable-based and gluten-, lactose- and egg-free. Suitable for those suffering from coeliac disease or those who are gluten-intolerant, they’re a delight for absolutely everyone!

Nadia Sammut, who created the Cuisine libreⓇ culinary experience, also opened the first gluten-free starred restaurant in the world: l’Auberge de La Fenière, near Lourmarin in the Luberon where she grew up.

The culture of taste, a pillar of the Provencal lifestyle and the Provence brand

The Provence brand promotes our territory and our savoir-faire in France and all over the world. It draws its inspiration from the light, colours, landscapes and food of the Sud region. Its high-quality licenced products are made responsibly and locally. In the same way as the chickpea, fennel and Camargue rice used in Kom&Sal recipes, the biscuits and the Panisses kit also celebrate the culture of taste, a pillar of the Provencal lifestyle. The contemporary graphic universe of the Provence brand was designed by Alice Van de Walle, the resident artist at l’Auberge de la Fenière.
