The church at Le Sambuc was part of an order placed in 1636 by Monseigneur de Barrault to build six parish churches in the Camargue. The bishop's aim was to combat the de-Christianization of the region. The facade was rebuilt in 1656 and the roof redone at the end of the 19th century. None of the original altars, baptismal fonts and carved ashlar fonts remain. A second building was later added as an extension to the nave.
