This mill operates in the traditional way in December and january: The stone grinder runs on water, the water from the wash-house activating a paddle wheel which drives the grindstone through a system of wooden and metal gears, and the press operates by hand, probably the last hand press in the region.
Private producers come with their olives and collect their olive oil.
Tourtour olive oil is not on sale in shops.
