Local and exceptional spirits — Rinquinquin, olive liqueur from Avignon, aperitifs from Maison Manguin — enter into dialogue with delicate homemade syrups such as roasted pepper, tonka bean, and elderflower. The recipes are simple yet expressive, fresh and perfectly balanced, with one ambition: to showcase the Provençal terroir.

Each glass narrates Provence in its own way: the softness of a summer evening, the power of the sun, the freshness of herbs, the minerality of the hills. Ingredients, carefully sourced from local producers (Maison Manguin, Domaine de Valdition, Distilleries de Provence…), reflect a deep respect for seasonality and authenticity.

The tapas menu, created in close collaboration with the chef of the gourmet restaurant L’Opale, celebrates Provençal conviviality. L’Ambar is open from May to September, Thursday to Monday (weather permitting), from 6:30 pm to 11 pm. For special evenings, the atmosphere continues until midnight.
