It was here, 30 years ago, on his way back from South America, that Hervé Goudard set down his suitcases, giving up a career as an international lawyer to become a winemaker.
The vineyard is currently planted with five grape varieties: Syrah, Cinsault, Grenache, Cabernet Sauvignon and Rolle. For the sake of quality, harvesting and most agricultural work is done by hand. No chemical fertilizers or insecticides are used. "Vinification temperatures are closely controlled in the vats, and the cellars are fully air-conditioned. All Saint Baillon wines are bottled at the Château.

Powerful Syrah and noble Cabernet-Sauvignon. The suppleness and aromatic complexity of a grand cru. At 8 or 10 years of age, it reaches its peak.
* Cuvée L'Oppidum Rouge - Côtes de Provence AOC
"Created in 1986 to complete the range of Saint Baillon wines with a red wine for very long ageing. Marked by 80% Syrah, balanced by Grenache, aged in barrels for 24 months, L'Oppidum reveals its ample, harmonious architecture and concentrated aromas of black fruits and violets. It's a wine of the Court".
