Just like the winegrower, the olive grower produces original and atypical cuvées through a plot-by-plot selection of early and late harvests.
All oils are cold extracted exclusively by mechanical means.

- With 12 hectares of vines, 3,000 olive trees and a hundred or so caper plants, Domaine de Michelle is a model of Mediterranean agriculture par excellence. In the unspoilt, undulating environment of the Sainte-Baume massif, between the mistral and the southern sun, the terraced vineyards are farmed organically.
The Margier family strives for the very best. On the vineyard side, 30 plots, 8 grape varieties and 2 oenologists contribute to the elaboration of the wine, taking care to enhance the personality of each cuvée. On the oil side, the estate cultivates the traditional olive varieties used to make AOP Aix-en-Provence olive oil.
