The Domaine de Mauvan extends over about 150 hectares in the municipality of Puyloubier, alongside Route Nationale 7. On the last southern foothills of Montagne Sainte-Victoire, the Domaine is midway between Aix-en-Provence and Saint-Maximin.
The Domaine currently has 26 hectares of vineyards producing the Côtes de Provence Protected Designation of Origin. The grape varieties used are Grenache, Cinsaut, Syrah, Carignan, Cabernet Sauvignon and Rolle.
The vines are planted on stony plateaux and hills, at an average altitude of 280 metres. The soil is the limestone-clay type, pH neutral to slightly basic. Yields are between 25 and 50 hectolitres per hectare, depending on the grape varieties and the year. Goblet pruning is still used on one and a half hectares of old vines and harvesting is by hand. The rest of the vines are trained and machine-harvested. The treatment programme is adapted to the year's weather conditions, in line with the “Nutrition Méditerranéenne” specifications. All the soil is ploughed.
The wine cellar was built in 1990 and has a gravity-flow design, stainless steel vats, a pneumatic wine press and a temperature regulator. For white and rosé wines, settling is carried out in coated concrete vats and fermentation in thermo-regulated enamelled steel vats.
