Because wine is a product of nature, it reflects the environment of the Domaine, which has been following the principles of organic farming for over thirty years.
The 18-hectare vineyard, planted with Grenache, Syrah and Cinsault, has been farmed organically since 1980 and lies between 300 and 450m above sea level in the Côtes du Rhône appellation. The clay-limestone soils come in a wide variety of textures: marl, sand and silt. This diversity is an undeniable asset, bringing complexity and originality to the wines. The wines are vinified and matured according to the principles of natural winemaking: indigenous yeasts, no filtration, fining or sulphur during ageing, to be as close as possible to the expression of the grape variety and terroir.
Every vintage is different: Antoine and Laurence Joly guide the fruit to its purest expression, and every time it's a new adventure!
The estate also produces AOC Nyons oil and olives.

- The vineyard's 18 hectares are located within the Parc naturel régional du Ventoux, an unspoilt environment that strives to reconcile the protection of natural resources with the development of human activities.
Pierre, Antoine and Laurence share this commitment with conviction. With their intimate knowledge of the land and a deep attachment to their family roots, these committed winegrowers produce only organic wines. In other words, they use no chemical treatments or fertilizers, harvesting is manual, yields vary according to a natural balance, and for the vinification, no sultiftes or other inputs...
Their wines are the fruit of a sincere alliance between cutting-edge professional expertise and a respectful love of nature.
