- Famous for its legends and its forest, the preserved Sainte-Baume massif is also a mecca for pastoralists. By setting up as a farmer in the heart of this rich and fragile ecosystem, Laurent Ajello offers his herd a choice environment, while contributing to the maintenance of a sustainable practice.
For 7 months, he led his animals through the pastures of the regional nature park: 120 Corsican dairy ewes, 30 mourérous (a sheep breed from the Southern Alps), 4 rams and a few lacaune.
At the head of this flock since 2015, he makes a whole range of cheeses and dairy products in his Gémenos laboratory. Yogurts, brousse, tomme... but also meat parcels are offered on market stalls, from local producers or directly from the farm.
