An organic family farm (certified by Alpes Contrôles) with mixed farming, and regenerative practices that respect nature. Our farm and ecolodge take great care to ensure the well-being of our animals, our land and the local heritage. Everything is located on the same plot of land, under the same roof, allowing for a truly locavore approach, from farm to fork. Respect for nature, for the land, for our animals and for quality guide everything we do. Our Jersiais cows graze for six months of the year around the farm and are fed hay from the Haute-Vallée de la Clarée. Their rich, easily digestible milk (A2/A2) enables us to make artisanal fresh and mature cheeses, yogurts, fromage frais and brousse. These products are available daily for direct sale at the farm from 4:00 pm to 6:00 pm in season. Our organic trout are raised in ponds fed by a pure, high-flow spring that provides excellent oxygenation. These trout, gutted and cleaned in our certified workshop, are ready to cook and available to order. Our aromatic, medicinal and edible alpine plants are dried and used in infusions. These cultivated medicinal alpine plants include: thyme, hyssop, peppermint, bergamot mint, Moroccan mint, monarda, oregano, dill and edelweiss. Depending on the infusion blend, these plants are combined with other wild herbs harvested from the meadows around the farm: meadowsweet, yarrow, larch blossom. Fresh or dried according to the season, to decorate your dishes and add new flavors, we offer the following edible flowers: borage, knapweed, marigold, red flax, cosmos, zinnia, calendula, safflower, dahlia and nasturtium. Our jams are made with care on the farm (red fruit, blueberry, rhubarb, vanilla summer fruit, wild marmottier-prune pear harvested around the farm). All these products are available seasonally for sale at the farm between 4:00 and 6:00 pm. Each evening, a unique menu is offered for the table d'hôtes, and can be found on the Ferme de la Clarée website.
