These varieties represent a significant percentage of French production, and are characterized by their ardency, bitterness and fervor.
The result is a highly aromatic, intensely authentic oil that has become a benchmark. Its distinctive aromas include dried fruits, artichokes and the sensation of freshly cut grass on food.
