- SA pAlpilles is a delightful project that deals with food, health and the environment, a beautiful story of tastes that stimulates the taste buds! In her canning factory in Sénas, Sylvie has rehabilitated an ancient technique, lacto-fermentation, for her vegetable preparations, and thus uses no energy in their manufacture. She also offers kefirs and black garlic, a subtle condiment used in gastronomy. Everything is packaged in recycled, returnable glass containers. She advocates local and short circuits, transforming "ugly" vegetables from neighboring market gardeners to create all these products, important sources of vitamins and probiotics. And she still has a little energy left to pass on and share, to let people taste and learn...
