The Marines farms are located in the Bay of Tamaris, in La Seyne sur mer.
I raise and refine oysters in the bay with a unique local and Varoise footprint.
Originally from Charente Maritime (Marennes Oléron oysters) and after several years of research on potential breeding sites in France, I chose and obtained 3 concessions in the bay of Tamaris in Seyne sur Mer in the Var. I surrounded myself with specialists from the CNRS to understand the currentology of the place and with former producers to learn its particularities.
This semi-enclosed bay still has access to the sea, thus guaranteeing a supply of specific nutrients, giving the products produced there an exceptional local taste.
Our elders understood this a long time ago, the first stories talking about its molds date from the 19th century!
The Tamaris Marine Farms were naturally born and raised from the water to offer you very good quality seafood products.
With more than 28 years of experience behind me in aquaculture, carrying out diverse and varied roles (supervision, development, management of the largest aquaculture farm in France and tropical seas), expertise abroad..., here I am today Now ready to serve you!
To do this, I will directly select my little oysters in Charente Maritime near Fort Boyard.
I acclimatize them with my Charentais colleagues before the return trip to the South.
Working on both salinity and temperature, there are big differences that should not be overlooked between the Atlantic Ocean and the Mediterranean Sea.
Arriving in Tamaris, I keep my small oysters in specific nets or pockets for at least 3 weeks in order to best prepare them for handling the gluing on ropes.
Once glued, they will be suspended in clusters of 3 on the breeding table for a period of 15 to 36 months.
They will be exposed several times in order to partly recreate the tidal phenomena that we do not have in the Mediterranean.
When the desired size is reached, the ropes will be taken out of the water, "stripped" (action of cleaning them by removing algae, concretions, etc.) and put back in bags at sea for another 2 weeks this time before purification and marketing.
