- Virginie and Sylvain Gillet are based in Aureille, at the foot of the southern slopes of the Alpilles mountain range. They graze their Rove goats in the hills that line the regional nature park. In this way, they make a lasting contribution to the upkeep of this protected environment.
Raised in the open air, adapted to the heat of the sun and the garrigues, this hardy breed thrives among evergreen oaks and olive trees. Cabri cheese and meat are all the tastier for it. Because, as Sylvain explains, "these goats produce less milk, but it's quality milk, and that's what counts for us! And that's why Gaec Gillet's products are labelled "Valeurs Parc".
