It was Mathieu's father who rehabilitated the old olive trees he now farms. The trees are planted on hillsides at an altitude of 642 m, at the very limit of the species' cultivation. A location that makes work difficult (practically everything has to be done by hand).
The young man who took over the family estate imposes the same seriousness on himself. His oil is a blend of aglandau (90%) and other varieties (lucques, colombale). Pressed at Moulin Bonaventure, his cuvée is certified organic. You'll find it on the estate along with his other products: saffron, capers, honey and bales of hay.

The climate, the excellent terroir of Provence and the hard work of the producer produce a saffron of the highest quality, grown with passion. The cultivation of this flower is manual, rigorous and precise: the art of obtaining exceptional saffron.
