Sault’s unique geographical location has shaped its distinctive history. Nestled in the northeast of the department on the Albion Plateau, the village was spared from invasions and thrived over the centuries thanks to the five-century rule of the d’Agoult family. As you wander through the streets of the walled village, you’ll uncover the remains of the counts’ castle, glimpse the lives of the local Saltésiens, and discover some unusually named alleyways—a true journey through time! Every Tuesday, join Manou, a lavender grower from La Loubatière farm, who has set up in one of the castle’s towers. She cultivates organic fine lavender and lavandin on her land. In the heartland of Provence’s iconic flower, meet a woman passionate about her craft and her homeland.
