The oil mill built at the entrance to the village is the successor to the many mills that existed in Jouques until 1956. The frost put an end to a long tradition of olive-growing. Young farmers decided to save and preserve this heritage by planting olive trees in the commune. Since then, production has been on the rise, with most of it processed at the St Vincent mill.
