Enough of office life! One day, Pierre Balmitgère wanted the fresh air and the infinite blue of the sea.
So, in 2008, he and his wife Brigitte moved to La Seyne-sur-Mer, in the Baie du Lazaret, to run their own aquaculture farm, one of those wooden houses built on stilts that have been delighting the eyes and palates of Var residents for decades. Today, the couple oversee two farms: the first is still devoted to fish (bass, sea bream and maigres), while the second is home to Mediterranean oysters and, above all, the great local specialty: the Tamaris mussel.
