After delighting Parisians and Lillois, it was high time for us to take the sunshine freeway... to Marseille.
Just a stone's throw from the Vieux Port, at 21 Cours Honoré d'Estienne d'Orves, our band of cheerful cooks, chefs de rangs and other enthusiasts of modern French-style catering are planning to unload their delicious French paraphernalia. And since this is Marseille, we'll be sure to include a few specialties with a southern accent.
At Brasserie Barbotin, locals can indulge in the best of the French brasserie hits: iconic leek vinaigrette, homemade pâté en croûte, onion soup dripping with poultry jus and Comté AOP, bavette with café de Paris or béarnaise sauce and homemade fries, or an anthological croque-monsieur.
And since our chefs like to appropriate the codes of our new terroir, new sun-drenched specialties are bound to appear on the menu, telling the story of the Provencal region: Mediterranean oysters, mussels au gratin with soubressade, thundering barbecued sea bass titillated with a risotto au fumet, glazed vegetables and sauce vierge or seasonal rhubarb tart.
